RED MEAT consumption increases the likelihood of colorectal cancer -- and so do processed meats. This is a new study, but I've been aware of this statistical correlation for some years -- colorectal cancer rates are low in countries such as Japan which have a low red meat diet. However, I have yet to see an account of the causal chain which takes you from processed red meat to colorectal cancer. My own guess is that the fat found in red meat is the culprit, but that guess isn't based on any deep understanding of the microbiology involved.

I have a family history of colon cancer. I'm calling tomorrow to set up my colon exam -- which is pass due. (An uncle died at 36 from colon cancer, so it was recommended that I start early in getting these.) Posted by Greg Ransom | TrackBack
